Turkey filet with rösti corners and broccoli-apricot vegetables

Ingredients

Servings: 1
  • 150 g Broccoli
  • 7-10 Tbsp Salt
  • 1 (approx. 80 g) small turkey filet
  • 1 tsp (5 g) Oil
  • 7-10 Tbsp white pepper
  • 2 (50 g each) frozen rösti corners
  • 75 g Apricots and 2 tablespoons apricot juice (canned; no added sugar)
  • 1 tsp (5 g) Sauce thickener
  • 7-10 Tbsp coarse pepper

Directions

    Clean and wash broccoli and cut into florets. Cook for 5-8 minutes in about 1/8 litre boiling salted water. Wash the meat and dab dry. Heat oil in a coated pan. Fry the fillet for about 4 minutes on each side. Season with salt and pepper. Add the Rösti corners to the pan and fry for 3-4 minutes on each side.

    Drain the apricots and cut into thin slices. Drain the broccoli and collect the cooking water. Bring to the boil with apricot juice and thicken slightly with sauce thickener. Season sauce with salt and pepper. Add broccoli and apricots and heat up. Arrange turkey filet, broccoli-apricot vegetables and rösti corners. Sprinkle with coarse pepper if desired
