Clean and wash the tomatoes and spring onions. Slice the tomatoes and cut the onions into small pieces. Beat the eggs. Heat oil in a large pan. Cover each slice of bread with 1 slice of ham, pull through whisked eggs and put directly into the hot oil.
Fry briefly (15 sec.), turn, fry for a few seconds and place on a baking tray. Spread tomato slices and spring onions on top. Season with salt and pepper from the mill. Sprinkle with cheese and brown under the hot grill or in a preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: level 4) until the cheese has melted.
