Tortellini salad with feta cheese

Ingredients

Servings: 5
  • 250 g dried white
  • 7-10 Tbsp or colorful tortellini
  • 7-10 Tbsp salt, white pepper
  • 1 collar Spring onions
  • 1 small red and yellow
  • 7-10 Tbsp Sweet pepper
  • 1 Tomato
  • 1/2 small romaine lettuce
  • 1-2 Garlic cloves
  • 1 can(s) (425 ml) peeled
  • 7-10 Tbsp Tomatoes
  • 5-6 Tbsp White wine vinegar
  • 7-10 Tbsp Sweet peppers
  • 7-10 Tbsp Sugar
  • 4 TABLESPOONS Oil
  • 200 g Sheep's cheese or feta
  • 7-10 Tbsp Parsley

Directions

    Cook the tortellini in boiling salted water for about 20 minutes. Drain, quench and let cool

    Clean and wash spring onions and cut them into fine rings. Clean, wash, seed and dice the bell pepper and tomato. Clean, wash and cut the lettuce into strips. Peel garlic and chop finely

    Drain the canned tomatoes, collecting the juice. Mix juice and vinegar. Season to taste with salt, pepper, paprika and sugar. Fold in the oil. Chop the canned tomatoes and stir into the marinade

    Mix the salad ingredients and marinade and leave to soak. Before serving, crumble the cheese and sprinkle over it. Garnish with parsley if desired.

    Drink: cool white wine
