Clean and wash mushrooms. Peel and crush garlic. Caramelise sugar until golden brown. Add 150 ml water and vinegar and stir until everything is dissolved. Season with salt and pepper. Simmer mushrooms and garlic for about 5 minutes.
Cook the tortellini in 2 portions in boiling salted water for about 2 minutes. Drain. Clean, wash and chop the celery. Mix the prepared ingredients together with the marinade and leave to stand for at least 30 minutes
Drain the mozzarella. Wash, pluck and roughly chop the basil. Fold everything with parmesan into the salad. Season to taste
