Poached eggs on leaf spinach

Ingredients

  • 750 g leaf spinach
  • 1 medium onion
  • 2 TABLESPOONS Butter or margarine
  • 4 Eggs
  • 7-10 Tbsp Salt
  • 2 TABLESPOONS Vinegar
  • 1-2 Garlic cloves
  • 2 discs Toast
  • 100 g streaky smoked bacon

Directions

    Wash and sort spinach. Peel and finely chop the onion. Heat the fat. Sauté onion in it. Add the spinach and let it collapse while turning.

    Boil water with vinegar and salt. Beat the eggs one by one in a soup ladle and carefully slide them into the lightly boiling water. Leave to stand for 3-4 minutes. Meanwhile peel garlic and cut into slices. Cut toast into rhombs or cubes as desired. Finely dice the bacon. Leave it crispy in a pan. Add the garlic and toast and fry until golden brown, turning. Arrange spinach and poached eggs on a plate.
