For the salad, clean, wash and slice the tomatoes. Peel and chop the onions. Clean and wash lettuce, pluck into bite-sized pieces. Mix vinegar with salt, pepper and sugar. Whip oil into it. Mix marinade and salad ingredients and arrange on 4 plates. Clean and wash spring onions and cut into fine rings.
Dice salami. Wash the chives and cut into small rolls. Whisk eggs and prepared ingredients, except 1 tablespoon of chives. Season with salt and pepper. Heat the fat in a large pan. Let the egg mass in it falter for about 5 minutes while stirring slowly. Arrange one slice of brown bread and 1/4 of the scrambled rice on each salad plate
