Menemen (eggs in paprika-tomato sauce)

Ingredients

Servings: 6
  • 300 g Onions
  • 500 g turkey green peppers
  • 1 mild green chili pepper
  • 180 g Sucuk (Turkish raw sausage)
  • 2 TABLESPOONS Olive oil
  • 1 can(s) (850 ml) Tomatoes
  • 7-10 Tbsp Salt
  • 1 pinch Sugar
  • 1 collar Parsley
  • 6 Eggs (size M)

Directions

    Onions peel and roughly chop. Wash the peppers, cut them lengthwise in half, clean them and cut them into half rings. Wash and clean the chilli pepper and cut into fine rings. Halve the sausage lengthwise and cut into slices

    Heat the oil in a large ovenproof pan. Braise onions, chilli and sausage for about 10 minutes. After about 5 minutes add paprika. Add tomatoes and chop them with a spatula. Simmer for another 5 minutes. Season to taste with salt and sugar

    Wash parsley, shake dry, pluck leaves from the stalks and chop. Add the parsley to the pan, except for a little bit for sprinkling. Place the eggs side by side in the pan. Leave in the preheated oven (electric cooker: 175 °C/ circulating air: 150 °C/ gas: see manufacturer) for approx. 10 minutes. Sprinkle with the remaining parsley. Flatbread tastes good with it
