Melt the fat. Mix eggs, salt and sugar until creamy. Stir in sour cream. Mix flour, baking powder and stir into the egg mixture. Stir in the fat.
Peel and slice the bananas, sprinkle with lemon juice. Heat oil in portions in a pan. Put 4 x 1 heaped tablespoon of dough into the pan, place 3-4 slices of bananas on each and fry until golden brown on each side. Bake the rest of the dough in the same way. Arrange the pancakes on a plate, serve with maple syrup
