Tsatsiki muffins with lamb salami and baby salad

Ingredients

  • 75 g Beurre de yaourt
  • 1/2 bunch Chives and thyme
  • 125 g Whole-wheat flour
  • 2 TEASPOONS Baking Powder
  • 1 pinch Sugar
  • 250 g Tzatsiki Quark
  • 3-4 Tbsp Milk
  • 2 Eggs (size M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS White wine vinegar
  • 2 TABLESPOONS Honey
  • 1 TEASPOON Mustard
  • 4 TABLESPOONS Olive oil
  • 350 g mixed baby salad (bag)
  • 8 discs Lamb salami (about 10 g each)
  • 7-10 Tbsp Grease

Directions

    Melt the butter and let it cool down. Wash the herbs and dab dry. Pluck thyme leaves from the stalks and chop finely. Cut chives into fine rolls.

    Mix flour, baking powder and sugar. Mix liquid butter, 175 g tsatsiki, milk and eggs. Fold in flour mixture and herbs and season with salt and pepper. Grease 8 wells of a muffin tray.

    Spread the mixture over the troughs. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 25 minutes. Let cool on a cake rack.

    Stir vinegar, honey and mustard until smooth, season with salt and pepper. Add oil little by little while stirring constantly. Clean the salad, wash and shake dry. Place 1 teaspoon of tzatziki on each muffin and garnish with a slice of salami.

    Mix salad with vinaigrette and serve with the muffins.
