Ingredients

  • 100 g soft butter
  • 9 Eggs (size M)
  • 250 g Flour
  • 2 coated Tsp Baking Powder
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 Branch rosemary
  • 4 Tomatoes
  • 75 g Spring onions
  • 4-6 Tbsp Oil
  • 2 discs Toast bread (approx. 25 g each)
  • 400 g mixed minced meat
  • 1 TEASPOON medium hot mustard
  • 1 TEASPOON Sweet peppers
  • 25 g Rocket
  • 4 Stem(s) Parsley
  • 4 discs Bacon (à approx. 10 g)
  • 7-10 Tbsp Rosemary
  • 7-10 Tbsp Oil

Directions

    For the wafer dough, stir butter until creamy. Add 4 eggs one after the other and stir in. Mix flour and baking powder and stir in 150 ml water alternately. Season with salt and pepper. Let the dough swell for about 20 minutes.

    In the meantime, wash the rosemary, shake dry, pluck the needles from the twig and cut very finely. Clean, wash and roughly dice the tomatoes. Leek onions clean, wash and cut into fine rings. Heat 1 tablespoon of oil in a pan, fry the tomatoes and spring onions for 3-4 minutes, turning them, and season with salt and pepper.

    Remove, set aside.

    For the meatballs, soak bread in cold water. Knead minced meat, mustard, 1 teaspoon salt, 1 teaspoon pepper, paprika, 1 egg and squeezed out bread well. Form 4 large flat meatballs.

    Stir rosemary into the waffle batter. Heat a rectangular waffle iron (13 x 21 cm), oil lightly and bake 4 double golden yellow waffles one after the other from the dough. Set aside.

    Heat 2-3 tablespoons of oil in a large frying pan. Fry the meatballs in it at medium heat on each side for about 3 minutes, remove and keep warm. In the meantime, clean and wash the rocket and let it drain well.

    Wash parsley, shake dry and chop finely.

    Put the bacon in a pan without fat and leave it crisp, take it out. Put 1-2 tablespoons of oil into the pan, heat it up, fry the remaining eggs in it to fried eggs, season with salt and pepper.

    Cut the waffles in half. Put about 1/4 rocket, some tomato mixture, 1 meatball, 1 fried egg and 1 slice of bacon on 4 of the wafer halves one after the other. Sprinkle with some parsley. Put the second wafer half on top.

    Garnish with rosemary if desired. Add the rest of the tomato mixture.
