Ingredients

  • 7-10 Tbsp 1 ripe mango
  • 500 g Tomatoes
  • 1 collar Spring onions
  • 6-8 TABLESPOONS apple juice
  • 5 TABLESPOONS Olive oil
  • 7-10 Tbsp salt, pepper

Directions

    Peel the mango, cut the flesh off the stone and dice finely. Wash, quarter, seed and finely dice the tomatoes. Clean and wash spring onions and cut into fine rings. Mix tomatoes, spring onions, apple juice and olive oil.

    Season with salt and pepper. Carefully fold in mango cubes. Serve.
