Ingredients

  • 2 Garlic cloves
  • 1-2 TABLESPOONS Lemon juice
  • 125 g Tahina (sesame paste; glass)
  • 7-10 Tbsp Salt

Directions

    Peel garlic and chop very finely. Mix with lemon juice and Tahina. Gradually stir in approx. 100 ml of ice-cold water (the mixture becomes very firm at first!). Continue stirring until a smooth, supple cream is formed.

    Season to taste with salt. Tastes great with falafel or pita bread.
