Teltower turnips with beefsteak

Ingredients

Servings: 4
  • 1 kg Teltow turnips or white turnips
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 bunch Chives
  • 1 tablespoon (20 g) butter/margarine
  • 1 heaped tbsp. flour
  • 1/4 l Milk
  • 1 TEASPOON Vegetable broth
  • 4 small steaks (approx. 100 g each)
  • 1-2 TABLESPOONS Oil
  • 7-10 Tbsp Java peppercorn

Directions

    Wash the turnips, peel and possibly halve them depending on size. Steam them in approx. 3/8 l boiling salted water covered for approx. 10 minutes

    Wash the chives and cut into small rolls. Drain the turnips, collect the vegetable water and measure a good 1/4 l

    Heat the fat. Briefly sauté the flour in it. Stir in vegetable water, milk and stock. Bring to the boil and simmer for about 5 minutes. Season sauce with salt and pepper, heat turnips in it. Stir in chives

    Dab steaks dry. Fry in hot oil for about 2 minutes on each side. Season with salt and coarse pepper. Arrange everything. Served with: Boiled potatoes
