Ingredients

  • 300 g Patna rice (white rice)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 2 TABLESPOONS Vinegar
  • 2 Leek sticks (leek)
  • 1 TEASPOON green horseradish
  • 7-10 Tbsp Sugar
  • 200 g smoked salmon
  • 1 TEASPOON German caviar
  • 50 g red trout caviar
  • 150 g Fillet of beef in wafer-thin-
  • 7-10 Tbsp in a slice
  • 7-10 Tbsp Juice of 1 lime
  • 1/2 yellow pepper
  • 1/2 bunch Chives
  • 1 small zucchini
  • 1 medium-sized carrot
  • 1 small red pepper
  • 3 TABLESPOONS Soy sauce
  • 50 g Deep-sea crab meat
  • 7-10 Tbsp Dill flags
  • 7-10 Tbsp Cling film

Directions

    Cook the rice for about 25 minutes. Season with salt and vinegar and let it cool down. Clean and wash the leek. Cut into 15 cm long pieces and steam in boiling water for 3 minutes. Deglaze leaves and lay out on cling film to form 3 rectangles (15x36 cm). Divide rice into 3 portions. Season first portion with 1/2 teaspoon horseradish and sugar. Cover a leek plate with salmon. Spread spiced rice on top. Roll up firmly with the help of the foil. Then cut into 12 thick slices. Garnish with caviar. Season second rice portion with remaining horseradish and pepper. Spread on the second leek plate. Place the beef fillet on top and drizzle with lime juice. Roll up and cut into slices. Garnish with packets of yellow pepper strips and chives. Clean, wash and finely dice the zucchini, carrot and red peppers. Season the rest of the rice with sugar and soy sauce. Spread on the last leek. Place the vegetables on top as strips. Roll them up, cut them into slices and garnish with prawns and dill

    In Japan, sushi bites are wrapped with nori (roasted seaweed leaves). Since these are not available everywhere here, we used leek instead. Seaweed is available in Asian shops or the special departments of big department stores. A package with several leaves costs 5.50-10 marks, e.g. "Sushinori" (brains) or "Yakizushi" (Kikkoman)
