Clean and wash the celery. Put leaf green aside for garnishing. Clean, wash and quarter the tomatoes. Wash and quarter apples, cut out core. Cut flesh into small pieces and sprinkle with lemon juice.
Cut the cured pork into small cubes. Cut grapefruits in half. Remove the flesh from the inner skins. Remove the skin afterwards. Mix the prepared ingredients and fill into the grapefruits. For the sauce stir yoghurt and mayonnaise until smooth.
Season to taste with salt, pepper and curry and add to the salad. Serve garnished with celery green. Wholemeal toast is delicious with it.
