Strawberry-Mango-Marmalade with ginger

  • 650 g Strawberries
  • 2 ripe mangoes (approx. 350 g each)
  • 7-10 Tbsp freshly grated. Ginger
  • 1 (25 g) Bag "Gelfix Super"
  • 350 g Sugar
  • 1 (5 g) Bag citric acid

Directions

    Wash, clean and chop the strawberries. Weigh 600 g. Peel mangos, finely dice flesh. Weigh 400 g. Puree half with the chopping stick

    Mix gelling powder and sugar in a large pot. Add everything. Bring to the boil while stirring over high heat. Cook for at least 3 minutes while stirring until bubbly. Stir in citric acid. Fill into glasses immediately, close them

    Mix gelling powder with 350 g fructose or sorbitol

    2 tablespoons (35 g) = 1 BE
