Strawberry cold dish with semolina dumplings

Ingredients

  • 2 TABLESPOONS + 15 g sugar
  • 600 g Strawberries
  • 30 g Pistachio kernels
  • 200 ml Milk
  • 7-10 Tbsp Salt
  • 1 TEASPOON Vanillin sugar
  • 35 g Durum wheat semolina
  • 1 egg (size M)
  • 2 Oranges

Directions

    Wash the strawberries, drain, clean, quarter and sprinkle with 2 tablespoons of sugar. Leave to stand for about 30 minutes. Put 500 g strawberries into a high mixing bowl and puree with a blender. Put them in a cold place. Roast the pistachios in a pan without fat, take them out, let them cool down and chop them roughly

    Put milk, 1 pinch of salt, 15 g sugar and vanillin sugar in a pot and bring to the boil. Stir in semolina, bring to the boil and let it swell at low heat while stirring for about 2 minutes. Remove from the heat, allow to swell for another 3-4 minutes. Separate the egg. Mix egg yolk and some semolina in a bowl, stir into the semolina and let it cool down. Beat the egg white until stiff and fold into the semolina in portions. Using 2 tablespoons dipped in water, prick 12 large dumplings out of the semolina mixture, chill

    Peel oranges so that the white skin is completely removed. Remove the fillets with a sharp knife between the parting skins. Squeeze the juice out of the parting skins and mix with the cold peel. Cold peel in 4 bowls with remaining strawberries, dumplings, orange fillets. Sprinkle with pistachios
