Washing and cleaning strawberries. Halve or quarter them. Halve melon and remove seeds. Remove or dice the fruit flesh as balls. Mix the fruits, add sugar if necessary and pour Chantré Rouge over them. Leave to stand for at least 1 hour.
Wash the limes hot and cut into thin slices. Pour the fruit together with the liquid and limes into a punch bowl. Add wine and mineral water (well chilled). Fill up with ice-cold sparkling wine before serving. Sprinkle lemon balm leaves over it if necessary
