Sponge roll with plum cream

Ingredients

  • 4 Eggs (size M)
  • 125 g Sugar
  • 1 package Vanillin sugar
  • 75 g Flour
  • 75 g Cornstarch
  • 1 TEASPOON Baking Powder
  • 3 TABLESPOONS Sugar
  • baking paper
  • 300 g Plums
  • 125 g Sugar
  • 1 Cinnamon stick
  • 7-10 Tbsp Peel and juice of 1 untreated lemon
  • 10 sheets white gelatine
  • 1 1/2 (each 200 g) Mugs
  • 7-10 Tbsp Whipped cream
  • 2 packages Vanillin sugar
  • 1 TABLESPOON Icing sugar
  • 1/2 TABLESPOON Cinnamon
  • 7-10 Tbsp Melissa

Directions

    Separate eggs. Place the egg whites and 4 tablespoons of lukewarm water in a bowl and beat very stiffly with the whisks of the hand mixer. Sugar and vanillin-

    Gradually add the sugar. Add egg yolk and stir in carefully. Mix flour, cornstarch and baking powder and fold into the egg mixture when sieved. Line a baking tray with baking paper and spread the sponge cake mixture on it. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for approx. 10-12 minutes. Sprinkle a tea towel with sugar. Turn the sponge cake plate over.

    Coat the paper with water and remove carefully. Roll up the sponge plate immediately and let it cool down. Wash, halve and stone the plums. Keep 3 plums for decoration. Bring a pot with the plums, 1/8 litre water, sugar, cinnamon stick, lemon peel and juice to the boil. Let it boil for 10 minutes. Soak the gelatine in plenty of cold water. Remove the cinnamon stick and lemon peel. Puree plums with the cutting stick of the hand mixer and pass through a sieve. Squeeze the gelatine vigorously. Stir the gelatine and plum mixture until the gelatine has dissolved. Whip 1 cup of whipped cream and 1 packet of vanilla sugar until very stiff. As soon as the plum mixture begins to set, fold in the cream. To fill, carefully spread the sponge roll out again.

    Puree plums with the cutting stick of the hand mixer and pass through a sieve. Squeeze the gelatine vigorously. Stir the gelatine and plum mixture until the gelatine has dissolved. Whip 1 cup of whipped cream and 1 packet of vanilla sugar until very stiff. As soon as the plum mixture begins to set, fold in the cream. To fill, carefully spread the sponge roll out again. Spread the plum cream evenly on top and roll everything up again. Mix icing sugar and cinnamon. Dust the sponge roll with it. Whip the rest of the cream until stiff. Pour into a piping bag with a star-shaped spout. Spray the cream tuffs onto the sponge roll. Cut plums into eight pieces and decorate the cream with them. Makes about 15 pieces
