Preheat the oven (electric cooker: 180 °C/circulating air: 160 °C/gas: see manufacturer) and line a baking tray with baking paper. Beat the egg white until stiff. Mix sugar, 3 tsp. sea salt, 2 tsp.
paprika, 1 tsp. chili flakes, 1 tsp. cumin and coriander. Fold into the beaten egg white.
Mix the nut mixture and pumpkin seeds with the spiced beaten egg white. Spread on the baking tray. Roast in a hot oven for about 15 minutes until golden brown. Take out, let cool down.
