Peel and finely chop the onion and garlic cloves. Wash the chives and cut into fine rolls. Mix cream quark with whipped cream, onions, garlic and chives. Season to taste with salt and pepper. Arrange the Bibeles cheese in a small bowl.
Good to know: It is also known as Bibbeles or Bibbeliskäs and is the regional name for quark; commonly used in Baden and Alsace. It is often eaten as a dip or spread on bread.
