Ingredients

  • 5 Eggs (size M)
  • 7-10 Tbsp Salt
  • 200 g Flour
  • 1 knife tip Baking Powder
  • 200 ml Milk
  • 175 ml Mineral water
  • 300 g Carrots
  • 600 g Broccoli
  • 1 Onion
  • 25 g Sesame
  • 25 g clarified butter
  • 6 discs (40 g each) medieval Gouda cheese
  • 5 discs (35 g each) cooked ham
  • 30 g Butter or margarine
  • 150 g Whipped cream
  • 7-10 Tbsp freshly ground white pepper
  • 1 pinch Sugar
  • 7-10 Tbsp Parsley

Directions

    For the pancake batter, place the eggs and salt in a mixing bowl and whisk with the whisk of the hand mixer until foamy. Mix 170 g flour and baking powder. Sieve onto the egg mixture and stir in. Stir in milk and mineral water. Let the dough swell for about 30 minutes. In the meantime clean, wash and slice the carrots.

    Clean and wash the broccoli, cut off the florets and cut the stems into slices. Peel and finely chop the onion. Stir sesame seeds into the dough. Heat some clarified butter in a pan (bottom 18 cm Ø) and bake 11 pancakes of the dough one after the other until golden brown. Keep the pancakes warm. Lay the pancakes, cheese and ham alternately in a tower. Finish with cheese. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 12 minutes. Cook vegetables in boiling salted water for about 10 minutes. Pour onto a sieve and collect the vegetable water. Measure 350 ml vegetable water.

    Lay the pancakes, cheese and ham alternately in a tower. Finish with cheese. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 12 minutes. Cook vegetables in boiling salted water for about 10 minutes. Pour onto a sieve and collect the vegetable water. Measure 350 ml vegetable water. Heat the fat in a pot. Sauté the onion in it, dust with the remaining flour, sweat it and gradually add the vegetable water and cream while stirring. Season sauce with salt, pepper and sugar. Add vegetables. Serve the pancake tower and creamed vegetables garnished with parsley as desired
