Bacon apple pancakes

Ingredients

  • 4 Eggs (Gr. M)
  • 7-10 Tbsp Salt
  • 200 g Flour
  • 1⁄2 Tsp Sugar
  • 200 ml Milk
  • 2 Apples (approx. 130 g each; e.g. Jonagold)
  • 4 TSP clarified butter
  • 8 discs Bacon
  • 8 TABLESPOONS Maple syrup

Directions

    Separate eggs. Mix the egg yolks, 1 pinch of salt, flour, sugar and milk with the whisk of the hand mixer to a smooth dough. Beat the egg white until stiff, fold in.

    Wash the apples and cut out the core with an apple corer. Cut apples into 6-7 rings. You don't have an apple corer? Just cut the apple into quarters and slice it lengthwise.

    Heat 1 tsp. clarified butter in a small pan (16 cm Ø). Fry 2 slices of bacon and 3-4 apple slices briefly. Distribute approx. 1⁄4 of the dough evenly on top. Fry for 2-3 minutes on a low heat until golden, slide on a lid and turn with the lid.

    Bake on the second side also golden yellow. Remove from the pan and keep warm in the oven (approx. 50 °C). Bake 3 more pancakes from the remaining ingredients in the same way. Serve the pancakes with maple syrup.
