Cut the smoked pork loin into strips. Whisk eggs and milk. Season well with salt, pepper and nutmeg. Heat 1 tablespoon of oil in a coated pan with lid (approx. 26 cm Ø). Fry the pork loin for about 2 minutes.
Add uncooked spaetzle and frozen peas and fry briefly. Pour on egg milk and let it simmer on the stove at low heat for 15-20 minutes.
Clean, wash and pluck smaller lettuces. Mix vinegar, salt, pepper and sugar. Fold in 3 tablespoons of oil. Mix salads and vinaigrette. Remove the omelette from the pan and sprinkle with fried onions and pepper.
Dress everything.
