Clean, wash and finely chop the spring onions. Dab the cutlets dry, cover with foil and tap them a little flatter
Spread the schnitzel with peanut butter. Sprinkle with salt and chilli. Spread the onions on top and roll up tightly. Cut each in 5-6 slices and fix with wooden skewers
Grill or fry for 6-7 minutes on a hot grill or stone while turning
