Savarin filled with fruit mix

Ingredients

  • 1/4 l Milk
  • 120 g Sugar
  • 1 cube (42 g) Yeast
  • 500 g Flour
  • 5 Eggs (size M)
  • 150 g Butter
  • 1 pinch Salt
  • 1/8 l cherry brandy
  • 100 g Apricot Jam
  • 7-10 Tbsp juice of 1/2 lemon
  • 1 medium sized baby pineapple
  • 2 medium-sized kiwis
  • 1/2 orange-fleshed melon (e.g. Charentais; approx. 300 g)
  • 250 g Strawberries
  • 7-10 Tbsp Mint
  • 7-10 Tbsp Sugar

Directions

    Take off some milk and warm it up slightly with about 10 g sugar. Crumble the yeast coarsely and dissolve in it. Put the flour into a bowl, press a hollow into it and add the yeast mixture. Dust with flour and leave to rise in a warm place for about 5 minutes. Add the remaining milk, 50 g sugar, eggs, butter in pieces and salt and knead to a smooth dough. Cover and leave to rise in a warm place for about 30 minutes.

    Grease a Savarinform (26 cm Ø) and sprinkle with sugar. Form the dough into a roll, put it into the tin and let it rise covered for another 30 minutes. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 40 minutes. Meanwhile bring 125 ml water and the rest sugar to the boil and add the kirsch. Remove Savarin from the oven and let it cool down for about 15 minutes. Turn out of the pan and soak with the syrup. Boil up the jam with lemon juice, spread the Savarin with it and let it dry. Clean the pineapple, peel it and cut it into approx. 3 mm thick slices. Peel kiwis and cut them into approx. 3 mm thick slices. Cut out medium-sized balls from the melon with a ball cutter. Wash, drain, clean and halve the strawberries. Roll the fruits in sugar.

    Boil up the jam with lemon juice, spread the Savarin with it and let it dry. Clean the pineapple, peel it and cut it into approx. 3 mm thick slices. Peel kiwis and cut them into approx. 3 mm thick slices. Cut out medium-sized balls from the melon with a ball cutter. Wash, drain, clean and halve the strawberries. Roll the fruits in sugar. Arrange Savarin on a plate, fill with the fruits and decorate with mint. Makes about 16 pieces
