Sauerkraut soup with chorizo chips

Ingredients

  • 1 Onion
  • 750 g Potatoes
  • 2 TABLESPOONS Oil
  • 1 TABLESPOON Tomato paste
  • 1 TABLESPOON Vegetable broth
  • 1 TEASPOON dried thyme
  • 1 (500 g) Bag of mild organic sauerkraut
  • 125 g C
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    ##peel and chop the onion## ##Peel, wash and chop the potatoes## Heat 1 tablespoon of oil in a large pot. Fry the onion in it. First fry potatoes, then tomato paste.

    Stir in 1 l water, stock and ##thyme##, bring to the boil. Cover and simmer for 5-10 minutes.

    Stir the sauerkraut into the soup and continue cooking for about 10 minutes.

    In the meantime cut the sausage into very thin slices. Heat 1 tablespoon of oil in a large frying pan. Fry the sausage in it over high heat for 1-2 minutes on each side until crispy. Take out.

    Season soup with salt and pepper. Serve with the sausage chips.
