Heat honey, sugar, spice and fat while stirring over medium heat until the sugar is dissolved. Let everything cool down lukewarm for about 15 minutes. Stir in 1 egg. Mix flour, cocoa and baking powder and sieve it onto the honey. Knead everything first with the dough hooks of the hand mixer, then smooth with hands. Cover the dough and leave it to cool for about 2 hours
Preheat the oven: Electric cooker: 200 °C/ convection: 175 °C/ gas: stage 3. Roll out the dough on a little flour 1/2 cm thick. St. Nicholas: Use 1 cookie cutter (approx. 10 cm long) to cut out 14 pieces. Kickboards: Schn
Cut 1 small hole for the handlebars at one end of the board (e.g. with 1 straw). Cut out 14 rectangles (approx. 2 x 6 cm) as supports. Then cut out 14 arms (approx. 1 x 4 cm). Cut out fir trees etc. from the remaining dough. Put everything on baking trays lined with baking paper and bake for 10-13 minutes. Let everything cool down on a grid
For the handlebars, cut the candy canes slightly lengthwise. Beat 1 egg white with the whisk of the hand mixer until stiff, adding icing sugar and 1 tablespoon lemon juice. Use this to stick the supports under the running boards. Then use the candy canes as wheels and the candy canes as handlebars
Stir the rest of the icing with 1 tablespoon of juice, divide it into 2 portions. Colour one red, fill the other into the freezer bag, cut off one corner. Spread the Santa Claus with red icing, decorate it with white icing and sugar lettering. Stick them on the scooters with icing. Decorate the trees with the rest of the cast iron. Let everything dry
