Peanut Fruit Bread

Ingredients

  • 100 g dried apricots
  • 30 g Raisins
  • 100 ml Pear syrup (health food store)
  • 500 g Flour
  • 1 cube (42 g) Yeast
  • 75 g Sugar
  • 1 pinch Salt
  • 150 ml Milk
  • 150 g Butter or margarine
  • 75 g unsalted peanut kernels
  • 2 TABLESPOONS Cocoa powder
  • 1 TEASPOON Cinnamon
  • 1/2 TEASPOON ground nutmeg
  • 7-10 Tbsp Grease
  • 175 g Icing sugar
  • 2 TABLESPOONS Lemon juice
  • 7-10 Tbsp some dried apricots, raisins and peanuts

Directions

    Dice the apricots. Pour pear syrup over the apricots and raisins, leave to soak overnight and drain. Mix flour, crumbled yeast, sugar and salt. Heat milk and fat, add and knead to a smooth dough.

    Cut the dough in half. Knead the apricots, raisins, peanuts, cocoa, cinnamon and nutmeg into one half. Cover the dough halves and let them rise in a warm place for about 30 minutes. Knead again. Form dark dough into a 26 cm long roll.

    Roll out light-coloured dough to a plate (approx. 28x25 Ø) cm and wrap the fruit dough around it. Put it into a greased box form (26 cm long) and let it rise again for about 30 minutes. Bake in the preheated oven (electric cooker: 175 °C/ gas: level 2) for about 35 minutes.

    Let it cool down a little in the mould, remove from the mould and let it cool down on a cake rack. For the decoration stir icing sugar, lemon juice and 2 tablespoons of cold water until smooth. Pour over the bread.

    Decorate bread with apricot halves, raisins and peanuts. Makes about 12 slices.
