Salmon with bacon and cucumber salad

Ingredients

Servings: 4
  • 800 g Salmon fillet
  • 7-10 Tbsp Salt
  • 1 untreated lemon
  • 2 stem(s) flat leaf parsley
  • 100 g Bacon
  • 1 Cucumber
  • 2 small onions (preferably red and white)
  • 6 TABLESPOONS Wine vinegar
  • 7-10 Tbsp Pepper
  • 1-2 TEASPOONS Sugar
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp fresh herbs and lemon
  • 7-10 Tbsp Aluminium foil
  • 7-10 Tbsp Grease

Directions

    Wash the salmon, dab dry and cut into portions. Salt it a little bit and cover it with 1 slice of lemon or sprinkle it with lemon juice. Cover with parsley and wrap with bacon. Peel cucumber and cut into thin slices. Peel and finely slice the onions. Mix with cucumber.

    Season vinegar with salt, pepper and sugar, gradually fold in oil. Mix with the salad ingredients, let it stand. Grease aluminium foil, place salmon packets on top and cook on the hot grill for about 20 minutes. Season salad again and arrange with salmon. Serve garnished with fresh herbs and lemon

    Tastes good with fresh baguette and a light grill sauce
