Salmon wholemeal pasta with avocadopesto

Ingredients

  • 80 g Wholemeal spaghetti
  • 7-10 Tbsp Salt
  • 120 g Salmon fillet
  • 1 TEASPOON Butter or margarine
  • 7-10 Tbsp Pepper
  • 100 g Fish stock
  • 4 TABLESPOONS Whipped cream
  • 1-2 TEASPOONS Lime juice
  • 150 g Avocado
  • 1 Dill stalk and basil
  • 1 Garlic clove
  • 7-10 Tbsp fresh herbs and lime

Directions

    Cook the pasta in boiling salted water for about 8 minutes, then drain. In the meantime wash the salmon and cut it into pieces. Melt the fat. Brown the salmon in it. Season with salt and pepper.

    Add stock and cream, let it boil down a little. Season the sauce with a few drops of lime juice, salt and pepper. Halve the avocado, remove the core. Remove the flesh from the skin. Sprinkle with 1 teaspoon lime juice. Wash the herbs, chop roughly. Peel garlic, press through a garlic press. Puree everything and season with salt and pepper. Arrange pasta, salmon and sauce with the pesto.
