Cut the crust off the bread. Dice the bread. Heat oil in a pan. Fry the bread cubes for 3-4 minutes while turning. Peel garlic and chop finely. Wash thyme, dab dry, remove leaves except for a little garnish from the stalks and chop finely.
Add chopped thyme, garlic and chili flakes to the bread and roast for about 1 minute. Season with salt and pepper, take out and drain on kitchen paper. Arrange the croutons in a bowl and garnish with thyme.
