Poor knights with rum-raisins & ice

Ingredients

  • 4 TABLESPOONS (
  • 6-8 TABLESPOONS Rum (40 %)
  • 1/4 l Milk
  • 2 Eggs (Gr. M)
  • 1 package Vanillin sugar
  • 7-10 Tbsp some cinnamon
  • 2 (50 g each) Milk roll
  • 2 TABLESPOONS clarified butter or butter/margarine
  • 200 ml Bourbon vanilla ice cream
  • 7-10 Tbsp Icing sugar

Directions

    Wash the raisins in hot water and drain well. Mix with rum, cover and let stand for at least 2 hours

    Whisk milk, eggs, vanilla sugar and cinnamon together. Cut rolls into thin slices and put them in the egg milk. Leave to soak for 10-15 minutes, turning frequently

    Heat clarified butter in portions in a coated pan. Fry the rolls for 4-6 minutes while turning them over until golden brown. Form 4 balls from the ice cream. Serve the knights with ice and raisins. Drizzle rum over them. Dust with icing sugar

    Old baked rolls or white bread are also suitable for Poor Knights. If it should be without alcohol: soak raisins in orange juice instead of rum. Or serve the Poor Knights with cherry or plum compote
