Clean, wash and finely dice the peppers. Apple wash, quarter, cut out core. Cut the fruit flesh into small cubes, except for 4 columns for garnishing. Mix paprika and apple cubes with the tartar sauce.
Roast toast, spread with fat and cut in half diagonally. Cover with 1 slice of roast beef each. Spread remoulade on top and sprinkle with roasted onions. Serve garnished with apple wedges and parsley.
