Rice salad in a radicchio basket

Ingredients

Servings: 4
  • 150 g Wild rice mixture
  • 7-10 Tbsp salt, white pepper
  • 1 g (approx. 250 g) Radicchio
  • 1 (approx. 100 g) Salad heart
  • 2 nectarines or prunes
  • 1 thick slice of cooked ham (125-150 g)
  • 1 small onion
  • 2 Limes or untreated lemons
  • 2-3 TEASPOONS fl. honey, 3-4 tablespoons oil
  • 150 g Whole milk yoghurt
  • 3 tablespoons (30 g) Pine nuts
  • 7-10 Tbsp Mint and lime or untreated lemon

Directions

    Cover the rice and let it swell for about 20 minutes in 300 ml boiling salted water. Then let it cool down

    Cleaning salads. Remove 8 whole outer radicchio leaves, wash. Wash the rest of the salad and cut into strips. Wash and stone the nectarines and cut into slices. Dice ham. Peel and chop onion

    1Lime wash, dab dry. Finely grate the peel. Squeeze the limes. Mix lime juice, lime zest, honey, onion, salt and pepper. Whip the oil into the mixture. Stir in yoghurt

    Roast the seeds. Place 2 radicchio leaves in each other. Mix the rice, lettuce strips, nectarines, ham and salad dressing and fill into the radicchio leaves. Sprinkle with seeds and garnish
