Ribbon noodles with beans and tomato sauce

Ingredients

Servings: 4
  • 1 Stalk leek (leek)
  • 1 can(s) (850 ml) white beans
  • 4 medium-sized tomatoes
  • 1 Onion
  • 2 Garlic cloves
  • 300 g ribbon noodles
  • 7-10 Tbsp salt, pepper
  • 2 TABLESPOONS Oil
  • 1 TEASPOON Vegetable broth (instant)
  • 1/4-1/2 Tsp Sambal Oelek
  • 3-4 Stem(s) Parsley

Directions

    Clean and wash the leek and cut into thin rings. Rinse and drain the beans. Wash and dice the tomatoes. Peel and finely dice onion and garlic

    Cook the ribbon noodles in plenty of boiling salted water for about 6 minutes until al dente

    Steam onion, garlic and leek in hot oil for about 5 minutes, season. Add the tomatoes, steam for another 5 minutes. Add 3/8 l water. Bring to the boil, stir in broth. Add beans, simmer briefly. Season to taste with salt, pepper and sambal

    Wash the parsley and chop finely, except for a little bit. Drain the pasta and serve with the sauce. Sprinkle with parsley and garnish. Grated cheese, e.g. Parmesan cheese, goes well with the pasta
