Noodles with chicken and bacon

Ingredients

Servings: 4
  • 100 g Parmesan cheese
  • 100 g Salad Mayonnaise (50 % fat)
  • 50 g Crème-fraîche
  • 50 g Whole milk yoghurt
  • 1 TABLESPOON spicy mustard
  • 7-10 Tbsp Juice of 1 lime
  • 1 TABLESPOON sweet mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1-2 TEASPOONS Sugar
  • 150 g Romaine lettuce hearts
  • 400 g cherry tomatoes
  • 100 g Baguette bread
  • 1 Garlic clove
  • 40 g Butter or margarine
  • 4 discs Bacon
  • 400 g Breast of corn poulard
  • 1 TABLESPOON Olive oil
  • 400 g Mafaldine noodles
  • 1 Daikon cress bed
  • 7-10 Tbsp Aluminium foil

Directions

    For the dressing, grate 50 g Parmesan cheese. Mix mayonnaise, crème fraîche, yoghurt, hot mustard, sweet mustard and lime juice. Season with salt, pepper and sugar. Clean, wash, shake dry and cut the salad into strips. Wash and halve the tomatoes.

    Dice bread. Peel garlic and dice finely. Heat the fat in a pan and sauté the garlic very briefly. Add the bread and fry in the fat for approx. 3 minutes while turning until crispy. Season with salt and pepper and take out. Fry the bacon in the hot pan until crispy.

    Wash the meat, dab dry and season with salt. Remove crispy bacon from the pan, heat oil in the pan and fry breast in it on the skin side for about 5 minutes, turn it and then continue frying for about 5 minutes. Remove the breast and wrap in aluminium foil. Fry the tomatoes in the frying fat for about 4 minutes. In the meantime prepare noodles in boiling salted water according to the instructions on the packet. Slice the remaining Parmesan cheese into shavings. Cut cress from the bed.

    Mix salad and sauce. Cut the meat into slices, removing bones. Drain the noodles, put them back into the pot immediately, fold in the lettuce, tomatoes and meat loosely and arrange on plates. Sprinkle with cress and parmesan and garnish with bacon.
