Marinated broccoli on rice noodle salad

Ingredients

  • 300 g Asian rice ribbon noodles
  • 30 g fresh ginger root
  • 1 small red chili pepper
  • 75 g Sesame seed
  • 7-10 Tbsp Juice of 5 limes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Turmeric
  • 2 small heads of broccoli (about 400 g each)
  • 50 g Wasabi salad
  • 50 g Baby leaf salad
  • 1 red pepper

Directions

    Prepare the pasta according to the package instructions. Peel ginger and chop finely. Wash and clean the chilli and cut into fine rings. Roast sesame seeds in a pan without fat until golden brown. Mix ginger, chilli, sesame and lime juice, season with salt, pepper and turmeric.

    Wash and clean the broccoli and divide into small florets. Cook the broccoli in boiling salted water for about 4 minutes until al dente. Mix about half of the marinade with the broccoli and the other half with the noodles.

    Let the broccoli and noodles marinate for about 20 minutes.

    In the meantime, wash the salad, shake dry and tear roughly. Halve the peppers, clean, wash and cut into small cubes. Arrange noodles in a bowl. Arrange broccoli with marinade, salad and paprika on top.
