Red cabbage salad with apple and feta

Ingredients

  • 1 kg Red cabbage
  • 7-10 Tbsp Salt
  • 3 TABLESPOONS Raisins
  • 1 tart apple
  • 1 TABLESPOON Lemon juice
  • 1 medium onion
  • 4 TABLESPOONS Oil (e.g. walnut oil)
  • 1/8 l apple juice
  • 3-4 Tbsp Red wine vinegar
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp with cinnamon
  • 7-10 Tbsp ground coriander and cloves
  • 3 TABLESPOONS Cashew nuts
  • 150 g light feta cheese
  • 7-10 Tbsp Chives z. Garnish

Directions

    Clean, wash, quarter and slice the red cabbage into fine strips. Sprinkle with approx. 1 teaspoon salt, knead well

    Wash the raisins, dab them. Apple wash, quarter, core and chop. Sprinkle with lemon juice.

    Peel and finely chop the onion. Fry in 1 tablespoon of hot oil until translucent. Deglaze with apple juice and vinegar, bring to the boil. Add apple and raisins and simmer for about 2 minutes. Season with salt, pepper, 1 tsp. sugar, 1/2 tsp. cinnamon, 1 pinch of coriander and 1 pinch of cloves. Stir in 3 tablespoons of oil

    Pour marinade over the cabbage and mix everything. Let the salad stand for at least 1 hour. Roast the cashew nuts in a pan without fat until golden brown. Take out

    Cut the feta into slices. Fold the cashew nuts into the salad. Season to taste with salt and pepper. Serve with feta and garnish with chives. Goes well with flatbread
