Red cabbage and grape salad

Ingredients

  • 400-500 g Red cabbage
  • 2-3 TABLESPOONS Vinegar (e.g. red wine vinegar)
  • 1 TABLESPOON Lemon juice
  • 1 TEASPOON Salt
  • 7-10 Tbsp white pepper
  • 1 TEASPOON Sugar
  • 3-4 Tbsp Oil
  • 250 g green grapes (e.g. seedless)
  • 150 g medieval Gouda cheese in slices
  • 7-10 Tbsp Lemon balm

Directions

    Clean and wash the red cabbage. Slice the red cabbage into thin strips on a vegetable slicer

    Mix vinegar, lemon juice, salt, pepper and sugar. Fold in the oil. Add marinade to the red cabbage. Knead vigorously with your hands for about 5 minutes. Cover and leave to stand for a few hours, preferably overnight.

    Pluck the grapes, wash and drain. Halve the grapes. Cut cheese slices into triangles or squares

    Mix the grapes and cheese with the red cabbage. Season the salad again with salt and pepper. Arrange the salad and garnish with lemon balm if desired

    Drink: cool rosé wine
