Coloured bean salad

Ingredients

  • 250 g Wax beans
  • 250 g French beans
  • 1 kg broad beans
  • 7-10 Tbsp (alternatively 300 g deep-
  • 7-10 Tbsp frozen)
  • 1 collar Savory
  • 7-10 Tbsp Salt
  • 1 Vegetable Onion
  • 3 Tomatoes
  • 5 TABLESPOONS Balsamic Vinegar
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar

    Clean and wash the wax and green beans and cut them into bite-sized pieces. Remove the beans from their shells. Wash the savory and boil in salted water, except for a bouquet for garnishing.

    Cook the beans for about 15 minutes. Then drain them. In the meantime, peel and halve the onion and cut it into slices. Clean, wash, quarter and seed the tomatoes. Cut the flesh into small cubes.

    Bring vinegar to the boil in 100 ml water. Boil onion in it for 2 minutes. Season with salt, pepper and sugar. Add tomato cubes. Mix everything with the beans. Cover and leave to stand for about 30 minutes. Season again and serve garnished with savory.
