Quarkkeulchen with compote

Ingredients

  • 300 g Potatoes (e.g. floury cooking)
  • 1 glass (720 ml) Cherries
  • 1/2 glass (720 ml) Mirabelle plums
  • 7-10 Tbsp rubbed off. Peel and juice of 1 untreated lemon
  • 1 TABLESPOON + 70 g sugar
  • 3 tablespoons (30 g) Cornstarch
  • 2 TABLESPOONS Raisins
  • 500 g Low-fat curd
  • 2 Eggs (Gr. M)
  • 60 g Flour
  • 2 TEASPOONS Baking Powder
  • 1 pinch Salt
  • 2-3 TABLESPOONS Oil
  • 1-2 TEASPOONS Icing sugar

    Wash the potatoes and cook for about 20 minutes. Quench, peel and press through a potato press while still hot

    In the meantime, drain the cherries and mirabelles, collecting the juice separately. Bring the cherry and lemon juice to the boil with 1 tbsp. sugar and half the lemon peel. Mix 1 tbsp. starch and 4 tbsp. mirabelles juice. Stir into the hot juice. Simmer for about 1 minute more. Add the fruits

    Wash the raisins, dab dry. Knead potatoes, quark, eggs, 2 tablespoons starch, flour, baking powder, raisins, 70 g sugar, salt and the rest lemon peel. Form approx. 12 cookies (approx. 7 cm Ø) from this

    Bake in hot oil for about 4 minutes on each side for each portion until golden brown. Arrange with the compote and dust with icing sugar
