Puszta ragout with fried potatoes

Ingredients

  • 1 kg waxy potatoes
  • 3 TABLESPOONS Oil
  • 1 yellow and green pepper
  • 600 g Pork sausage
  • 2 Onions
  • 1 can(s) (850 ml) Tomatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1-2 TEASPOONS light balsamic vinegar
  • 7-10 Tbsp Sugar
  • 4-5 Stem(s) Oregano
  • 2 TEASPOONS Capers

Directions

    Peel and wash the potatoes and cut them into thin slices. Heat 2 tablespoons of oil in a large, coated frying pan. Fry the potatoes for 10-12 minutes, turning them over.

    Clean, wash and cut the peppers into strips. Remove the sausage from the skin and cut into strips. Peel and chop the onions. Heat 1 tbsp. oil in a frying pan. Fry the sausage for 3-4 minutes while turning, remove. Add paprika and half of the onions to the hot frying fat, fry for 1-2 minutes, turning. Deglaze with tomatoes. Chop the tomatoes with a spatula. Bring everything to the boil, season with salt, pepper, vinegar and sugar. Simmer covered for 3-4 minutes.

    Add the remaining onion cubes to the potatoes 3-4 minutes before the end of the cooking time, season with salt and pepper. Wash oregano, dab dry, remove leaves except for something to garnish, pluck from stalks, chop coarsely, add to tomatoes with capers and sausage. Simmer for 1-2 minutes. Pour sausage ragout into a bowl, garnish with oregano. Add fried potatoes
