Ingredients

  • 7-10 Tbsp Pour 4 pers
  • 3 large tomatoes bien mûres
  • 1 Chorizo
  • 250 g de tomates cerises
  • 2 échalotes
  • 1 bouquet de persil plat
  • 2 gousses d'ail
  • 100 g de fromage de brebis (type Manchego)
  • 7-10 Tbsp huile d'olive
  • 7-10 Tbsp sherry vinegar (or other wine vinegar)
  • 7-10 Tbsp sel et poivre

Directions

    1 Wash and dry all the tomatoes. Cut the cherry tomatoes into quarters. Coarsely chop the large tomatoes. Put them in a salad bowl, mix them together

    2 Peel the chorizo and slice it into slightly thick slices. Fry them in an oiled frying pan, turning them over until crispy.

    3 Peel and finely chop the shallots and mix them with the tomatoes. Peel and chop the garlic. Wash, dry, peel and chop the parsley. Take some Manchego shavings.

    4 Add the garlic and chorizo to the pan, stir for a few moments and remove from the heat. Pour the vinegar into the pan, stir. Spread the chorizo and garlic over the tomatoes, add the cheese and sprinkle with a little flavoured cooking oil. Season with salt and pepper, mix and serve.
