Punch cherries with marzipan cream

Ingredients

  • 1 glass (720 ml; drained weight 370 g) Sour cherries
  • 2-3 tablespoons (10 ml each) Red wine
  • 1 TABLESPOON Lemon juice
  • 25 g Sugar
  • 1 (2 g) Bag of spice for mulled wine (Glühfix)
  • 20 g Cornstarch
  • 40 g Marzipan raw mass
  • 100 g Whipped cream
  • 100 g Mascarpone
  • 1 package Vanillin sugar
  • 7-10 Tbsp Lemon peel strips and mint leaves

Directions

    Drain the cherries and collect the juice. Put 175 ml cherry juice, red wine, lemon juice and sugar in a pot and bring to the boil. Place the infusion bag of mulled wine spice in the juice and let it stand at low heat for 3-4 minutes and take it out. Mix starch and 2-3 tablespoons of cherry juice until smooth and stir into the punch. Bring to the boil again, remove from heat and add the cherries. Let it cool down a little bit and fill it into glasses.

    Leave to cool in the refrigerator. For the cream mix marzipan and 2-3 tablespoons of cream with the whisks of the hand mixer. Add mascarpone and vanilla sugar and stir in. Whip the rest of the cream until stiff and fold into the marzipan mixture. Pour into a piping bag with perforated spout and squirt onto the punch cherries. Decorate as desired with lemon peel strips and mint
