Ingredients

  • 75 g Cantuccini (Italian almond biscuits)
  • 1 glass (370 ml) Cherries
  • 4 TABLESPOONS Amaretto
  • 1 Organic Lemon
  • 150 g Mascarpone
  • 250 g Low-fat curd
  • 2 TABLESPOONS Sugar
  • 1 package Vanillin sugar
  • 3 TABLESPOONS Almond kernels (with skin)

Directions

    Arrange the cantuccini in 4 dessert glasses or cups. Drain the cherries while collecting 3 tablespoons of juice. Mix the juice with 2 tbsp. amaretto and drizzle over the cantuccini. Leave to stand for about 30 minutes.

    Wash the lemon and grate dry. Grate approx. 2 tsp. peel, squeeze the lemon. Mascarpone, quark, lemon juice, 2 tablespoons Amaretto, sugar and vanilla sugar with the whisks of the hand mixer short v

    Roughly chop the almonds. Spread the cherries and half the almonds over the cantuccini. Add mascarpone cream. Sprinkle with remaining almonds and lemon peel.
