Arrange the cantuccini in 4 dessert glasses or cups. Drain the cherries while collecting 3 tablespoons of juice. Mix the juice with 2 tbsp. amaretto and drizzle over the cantuccini. Leave to stand for about 30 minutes.

Roughly chop the almonds. Spread the cherries and half the almonds over the cantuccini. Add mascarpone cream. Sprinkle with remaining almonds and lemon peel.
