  • 1 pack of (450 g) deep-frozen puff pastry
  • 6 Peaches
  • 100 g Blackberries
  • 1 Egg Yolk
  • 100 g Apricot Jam
  • baking paper

Directions

    Defrost puff pastry sheets side by side at room temperature. Carve peaches crosswise, blanch briefly in boiling water, rinse under cold water and peel the skin. Cut peaches in half, remove the stone and quarter peach halves. Sort the blackberries, wash carefully and drain. Whisk the egg yolks with 1 tablespoon of water. Cut puff pastry sheets in half. Brush 2 opposite corners of each plate with egg yolk, fold over and press together.

    Place shaped slices on a baking tray lined with baking paper and brush with egg yolk. Push 2 peach halves per slice under the folded-over corners and spread the blackberries in the middle of the slice. Bake the slices in a preheated oven (electric range: 200 °C/ gas: level 3) for approx. 25 minutes until golden brown. Warm up the jam at low heat, pass through a sieve. Spread the fruit slices with the jam. and let them cool down. Results in approx. 12 slices
