Cut onion into thin rings. Heat oil in a pot. Fry the onion in it until golden brown, take it out. Wash the potatoes and carrots. Cut both into small cubes and fry in hot frying fat. Deglaze with about 300 ml water.
Bring to the boil and stir in the stock. Add soup vegetables and cook covered for about 15 minutes. Wash and chop the parsley. Cut the sausages into slices and heat them in the soup. Season soup with salt and pepper. Sprinkle parsley and onion rings on top
