Peel, wash and roughly dice the potatoes. Peel and chop the onion. Peel garlic and cut into thin slices. Cut sausage into slices as well
Heat the oil in a pot. Turn the sausage and fry it briefly, then remove. Sauté potatoes, onion and garlic in frying fat for about 5 minutes. Deglaze with 1 l water. Bring to the boil and dissolve the stock in it. Let simmer for about 20 minutes
Take out some potato cubes and garlic slices. Finely mash the rest in the broth. Season the soup with salt and pepper. Add the sausage and heat up
Refine soup with cream. Wash the chives and cut into fine rolls. Sprinkle the rest of the potatoes and garlic over the soup
