Ingredients

  • 200 g Mozzarella cheese
  • 1/2 glass (25 g) Basil in vegetable oil
  • 8 Tomatoes (about 50 g each)
  • 75 g blue cheese
  • 1 TABLESPOON mayonnaise
  • 2 stem(s) flat leaf parsley
  • 2 Figs
  • 8 crackers (e.g. cheese crispies)
  • 1 package (450 g) frozen rösti corners
  • 2 TABLESPOONS Oil
  • 4 discs Parma ham
  • 75 g Fresh cream
  • 7-10 Tbsp pink berries
  • 7-10 Tbsp pickled green peppercorns

Directions

    Cut the mozzarella into very small cubes. Mix with basil paste. Wash the tomatoes, cut off a flat lid. Hollow out the tomatoes. Pour in prepared mixture. Stir the blue cheese and mayonnaise until smooth. Pour into a piping bag with star-shaped spout.

    Wash the parsley, pluck the leaves from the stems. Cut figs into slices. Cover the crackers with parsley and spray cheese paste on top. Garnish with 1 fig slice each. Fry the Rösti corners in hot oil for about 4 minutes on each side. Cover with 1 halved slice of Parma ham. Sprinkle a little crème fraîche with pink berries and green pepper on top
